1) It starts with an onsite review and visit.

 

2) Tracie takes your business apart and puts it back together again.

 

3) The first hour is spent with Tracie entering as a customer and availing of the services as a customer and testing the offering on many levels. Which includes a review of processes, hospitality, cleanliness, menu offering, speed of service, delivery, and presentation. It is critical that no one is versed on my visit as I must see the business in its normal light, not one that has been tampered with out of fear or embarrassment. We can grow from a space of honesty and transparency. Tracie has seen everything so you will not shock her if that is a fear or worry of yours.

 

4) We then find a quiet corner (must be a space that allows freedom of speech to flow without interruption). The point is to paint a clear picture of what this business means to you and to unravel the tough truths of your current scenario while addressing the focus and goals of the business. Those goals can be tiny or large but it creates an image of the roadmap that must be built to ensure success is attainable.

5) Then Tracie will jump into being a member of the team and get fully submerged into the daily operations. This is also critical as getting to know the staff unearths an enormous amount of essential knowledge required to move forwards. Tracie 'works' onsite with your team (chef whites at the ready if required) and as a result can pinpoint necessary areas that require immediate attention in order to increase revenue and help inform the next steps.

 

4) An intensive review of FOH and BOH systems. Tracie will ask you to demonstrate what software and systems are in current use. We will review the information being gathered and utilised. This is the overhaul that you and your business deserve.

 

5) The end of the 4/5 hours will result in a quick debrief. Then it takes a number of days for Tracie to write a report and bespoke action plan based on you and your business. This document is to create focus and to help you stay on track and hold yourself accountable.
